Materials

Material for undercoat:

  • 100 grams of rice flour
  • 300 ml coconut milk
  • 5 tablespoons of sugar
  • 1 teaspoon pandan paste
  • 1/4 teaspoon salt

Material for the top layer:

  • 50 grams of rice flour
  • 200 ml coconut milk
  • 30 grams of grated cheese
  • 1/4 teaspoon salt

How to make the bottom layer:

  1. Prepare a saucepan and boil the coconut milk until it boils. Add sugar and salt and stir until all ingredients are dissolved. Turn off the heat then let it cool.

  2. Once cool enough, add the rice flour and pandan paste and stir until evenly distributed.

How to make the top layer:

  1. In a separate saucepan, bring the coconut milk to a boil to make the top layer. Add the grated cheese and salt and stir until all the ingredients are combined. Let it cool.

  2. Once cool, add the rice flour and stir until evenly distributed.

Tray making process:

  1. Heat the steamer and grease the tray with enough cooking oil.

  2. Fill 3/4 of the mold with the bottom dough and steam for 15 minutes.

  3. After 15 minutes, fill the mold with the top of the dough and then steam again for about 35 minutes until the tray is cooked.

  4. Remove the tray from the steamer after it is cooked then let it cool. Remove the tray from the mold, arrange on a plate and sprinkle with grated cheese.
