Ingredients and Seasonings for Making Spicy Chicken Rendang:

  • 1 kg of chicken meat
  • 1.5 liters of water
  • 3 cm galangal, geprek
  • 3 tbsp lime juice
  • 3 bay leaves
  • 1 tbsp tamarind water
  • 200 ml thick coconut milk
  • 1 tsp pepper
  • 3 lemongrass stalks, crushed
  • 1 tbsp brown sugar
  • 2 lime leaves
  • 1 tsp chicken stock powder
  • 1 tbsp salt or to taste

Ground Spices For Spicy Chicken Rendang:

  • 1 tsp coriander
  • 12 red onions
  • 8 cloves of garlic
  • 3 pieces of roasted hazelnut
  • 7 pieces of red chili
  • 10 large red chilies
  • 3 cm ginger
  • 2 cm turmeric

How to Make Easy Spicy Chicken Rendang

How to Process Chicken Meat:

  1. First of all, before we process the chicken meat and season it with so many spices and seasonings. First, we cut and wash the chicken first. Please cut the chicken into the desired size. Here I cut the chicken into 8 parts. But you can adjust it to your taste and your family at home.
  2. After cutting everything, wash the chicken meat thoroughly with running water and make sure if the dirt that sticks to the meat is cleaned thoroughly.
  3. After that, place it in a container and drain the water. After that, soak the meat with a squeeze of lime juice and then let it rest for a while.

How to Cook Spicy Chicken Rendang:

  1. Prepare a frying pan, pour oil into it and wait until the oil in the pan becomes hotter. Saute the mashed spices until you can smell the fragrant aroma from the stir fry and enter the bay leaves, galangal, water, coconut milk, and tamarind water along with lemongrass and lime leaves.
  2. Stir and make sure that the coconut milk you pour does not break. For that, make sure if you keep stirring it until the coconut milk boils.
  3. Cook until the coconut milk releases oil and add salt, brown sugar, seasoning broth and pepper. Taste the spices and don't hesitate to add more if you feel the seasoning you pour is not right.
  4. Add the chicken meat and cook until it boils and the seasoning sauce is absorbed by the chicken as a whole.
  5. Continue cooking until the gravy thickens and is almost dry. Don't forget to stir occasionally so that the bottom of the pan doesn't burn which makes the cooked rendang dish messy.
