  • 6 lime leaves
  • 2 bay leaves
  • 2 cm ginger
  • 3 cm galangal
  • 2 lemongrass stalks
  • 1.5 tablespoons salt
  • 1 teaspoon sugar
  • enough cooking oil
  • 2 liters of water

  • 10 red onions
  • 8 cloves garlic
  • 5 grains of white hazelnut
  • 2 cm turmeric
  • 1 teaspoon coriander

Koya Powder Material

  • 5 cloves of garlic
  • 15 pieces of prawn crackers

How to Make Soto Sauce

  1. First of all, please take the chicken that you have provided. Then divide into 4 parts. Wash thoroughly under running water. Drain.

  2. After that, prepare a pot and fill it with water. Boil the cleaned chicken for about 5 minutes until the dirt comes out. Please throw away the water from the chicken stew.

  3. Then the boiled chicken is washed again until it is completely clean.

  4. After that, in a saucepan, please add 2 liters of water. Then boil the chicken again along with other ingredients such as lime leaves, salan leaves, ginger, galangal, lemongrass and salt. Cook the chicken until tender and cooked.

  5. After that, please lift and drain it first. Set aside for chicken broth.

  6. Heat the cooking oil to fry the chicken. Then fry the boiled chicken until it turns brown. Please lift and drain.

  7. If it's a bit cold, shred the chicken. If so, set it aside.

  8. Reheat about 3 tablespoons of oil to sauté the spices. Add the ground spices. Stir well and saute the spices until fragrant.

  9. While sauteing the spices, you can heat the chicken stock again. Then add the sautéed spices to the pot of broth. Stir until evenly mixed.

  10. Add sugar. Stir evenly. Bring the broth back to a boil.
