Materials

Main Ingredients Needed

  • 300 grams of beef
  • 300 grams of tripe
  • 3 cm galangal
  • 4 tbsp salt
  • 1/2 tsp pepper powder
  • 3.500 ml of water
  • 4 lime leaves
  • 3 tsp sugar
  • 1 lemongrass stalk , take the white part and crush it
  • enough cooking oil

Softened seasoning

  • 12 red onions
  • 2 cm of burnt turmeric
  • 2 tsp coriander
  • 2 cm ginger
  • 4 pecans that have been roasted
  • 5 cloves of garlic

  • 3 stalks of celery
  • 3 spring onions
  • 3 limes _
  • 3 tbsp fried onions

  • 2 hazelnuts that have been roasted
  • 10 pieces of boiled red chili
  • 1/4 tsp salt
  • 2 boiled curly red chilies

How to Prepare Ingredients

  1. Clean the beef that has been prepared. If you have, cut it with a size of 2x2 cm.

  2. Then take the tripe and wash it clean. Then boil and cut into 2x2 cm size.

  3. For the lime leaves, please throw them away. Then take the white part of the lemongrass.

  4. Puree all the spices as mentioned above.

  5. Then finely slice the scallions and celery for complementary ingredients.

How to Make Soto Madura

  1. If all the ingredients and spices are ready, the next step that can be done is making soto. Please prepare a pot and put water in it. Boil the water along with the meat that has been cut into pieces until the broth is cooked. Then please remove the meat. For the broth taken as much as 3000 ml. Then bring the broth to a boil again.

  2. Next please enter the tripe and beef. Cook until the broth boils.

  3. Then prepare a frying pan and pour about 3 tablespoons of cooking oil. Then enter the spices that have been mashed into it along with the galangal, lime leaves and lemongrass. Stir until evenly mixed and fragrant.

  4. After the seasoning is cooked, please remove it and add it to the beef stew. Stir until evenly mixed.
